- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup sugar or 1/3 cup honey for a natural sweetener
- 1 tsp vanilla extract
- 1/4 cup melted butter or oil
- 1 cup fresh or frozen blueberries
- 1 tsp lemon zest optional
Preheat the oven to 375°F (190°C). Line a muffin tin with cupcake liners or grease it with nonstick spray.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
