For the French Toast
- 8 thick slices of brioche or challah bread
- 4 large eggs
- 1 cup milk or half-and-half
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 2 tbsp butter for cooking
For the Bananas Foster Topping
- 4 bananas sliced lengthwise
- 1/4 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup dark rum
- 1/2 tsp ground cinnamon
- Optional: whipped cream or powdered sugar for garnish
Prepare the French Toast
In a mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.
Dip each slice of bread into the egg mixture, ensuring both sides are well-coated.
Heat a large skillet over medium heat and melt 1 tbsp of butter.
Cook the soaked bread slices in the skillet for 2-3 minutes per side, until golden brown. Repeat with the remaining slices, adding more butter as needed.
Make the Bananas Foster Sauce
In the same skillet, melt the butter over medium heat.
Add the brown sugar and stir until dissolved, creating a smooth caramel sauce.
Stir in the cinnamon and gently add the banana slices, cooking for 2-3 minutes until softened but not mushy.
Carefully add the rum to the skillet, then tilt the pan slightly to ignite the alcohol (optional, use caution!). Allow the flame to subside, leaving a rich, flavorful sauce.
Assemble the Dish
Place two slices of French toast on a plate.
Spoon the warm bananas and sauce over the top.
Garnish with whipped cream or a dusting of powdered sugar if desired.
