Ingredients
  

  • 12 oz rigatoni or fettuccine pasta
  • 1 lb sirloin steak or ribeye, cut into thin strips
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1/2 teaspoon red pepper flakes optional, for heat
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley chopped (for garnish)
  • Salt and pepper to taste
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup reserved pasta water optional

Instructions
 

  • Cook the pasta: Bring a large pot of salted water to a boil and cook pasta until al dente according to package instructions. Reserve 1/4 cup of pasta water and drain the rest. Set aside.
  • Prepare the steak: Season the steak strips with salt, pepper, and Italian seasoning.
  • Sear the steak: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak strips and sear for 2-3 minutes per side until browned. Remove the steak from the skillet and set aside.
  • Make the sauce: Reduce the heat to medium, add butter to the skillet, and let it melt. Stir in the garlic and red pepper flakes, cooking for 1-2 minutes until fragrant. Pour in the heavy cream and Parmesan cheese, whisking until the sauce is smooth and creamy. Adjust seasoning with salt and pepper.
  • Combine pasta and steak: Add the cooked pasta and steak back to the skillet, tossing to coat everything evenly in the garlic butter sauce. If the sauce is too thick, add a bit of reserved pasta water to loosen it.
  • Garnish and serve: Plate the pasta, garnish with fresh parsley and extra Parmesan cheese. Serve immediately while warm.
