Ingredients
  

  • 12 oz pasta any type, but penne or spaghetti work great
  • 8 oz Boursin cheese garlic & fine herbs or any variety
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese grated
  • Salt and pepper to taste
  • Fresh parsley for garnish

Optional Add-ins

  • 1/2 cup spinach fresh or frozen
  • 1/2 cup sun-dried tomatoes
  • Grilled chicken or shrimp for extra protein
  • Crushed red pepper for a spicy kick

Instructions
 

Cooking the Pasta

  • Begin by bringing a large pot of salted water to a boil. Add your pasta and cook according to the package directions, usually about 8-10 minutes, until al dente.
  • Reserve 1/2 cup of pasta water before draining, and set the pasta aside.

Making the Boursin Sauce

  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  • Stir in the Boursin cheese, breaking it up with your spoon, and cook for another 2 minutes until it starts to melt.
  • Pour in the heavy cream and stir to combine. Allow the sauce to simmer for 5-7 minutes until it thickens to a creamy consistency.
  • Add salt and pepper to taste. You can also toss in the Parmesan cheese at this point for added flavor and creaminess.

Combining and Serving

  • Add the drained pasta to the skillet with the sauce, tossing to coat the pasta evenly. If the sauce seems too thick, you can add the reserved pasta water a little at a time until you reach the desired consistency.
  • Serve immediately, garnished with freshly chopped parsley and a sprinkle of Parmesan cheese if desired.
