- 12 oz rigatoni pasta
- 2 tbsp olive oil
- 1 small onion finely chopped
- 3 garlic cloves minced
- 1 can 14.5 oz crushed tomatoes
- 1/4 cup heavy cream
- 1-2 tsp red pepper flakes adjust to taste
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- Freshly ground black pepper to taste
- 1/4 cup freshly grated Parmesan cheese optional
Preparing the Pasta
Boil a large pot of salted water. Add the rigatoni pasta and cook according to package directions, about 9-11 minutes, until al dente.
Drain the pasta and set aside, reserving about 1/2 cup of pasta water.
Making the Sauce
While the pasta cooks, heat olive oil in a large skillet over medium heat.
Add the chopped onion and cook for about 3-4 minutes, until softened.
Stir in the garlic and cook for another 30 seconds, until fragrant.
